Kettle Corn

Thirteen hour work day behind me and I am exhausted!  Just totally pooped.  And there are still two more days of this to go... I need a snack, I need a pick-me-up, I need something with a little POP!  And I need it to be fast...


Ah kettle corn... that sweet and salty taste with the thin crunchy coating of sugar on each kernel.  I never would have believed that it is so easy to make your own.  And BONUS: you feel awesome cause you made it yourself.  You totally get bragging rights.  You totally shouldn’t feel bad for demolishing the whole bowl.  You can always make another to share...

All you need is a little oil, popcorn kernels, and sugar.  Oh and salt.

Popcorn is in love with sugar in this recipe.

This snack is perfect for watching the Oscars this weekend.  Or for perusing a stack of amazing books while wrapped in your favorite fuzzy blanket in the corner of your comfy couch.  Either way.



Stovetop Kettle Corn

1/4 cup canola oil
1/4 cup sugar
1/2 cup popcorn kernels
1 tsp salt (or to taste)

Heat the oil in a large pot with a lid over medium heat.  Put a couple kernels in to check when the oil is hot enough.  When these two kernels pop you are ready to go!  Fish out the popped kernels with a spoon.  Pour in the remaining unpopped kernels and the sugar and cover.  Shake every once in a while to distribute sugar evenly and prevent burning.  Popping should soon commence.  Keep it going until you can count 5-10 seconds without a pop.  Remove from heat and pour on the salt.  Cover and shake vigorously to distribute the salt. 

As the kettle corn cools, it may all stick together.  Just break it apart gently with your fingers before serving!
